High-Temperature vs. Low-Temperature Sanitizing
High-temperature undercounter dishwashers heat the final rinse water to 180°F to achieve sanitation without chemical additives in the rinse cycle. These are the preferred configuration for most restaurant and bar applications because they produce spot-free results on plates and glassware and eliminate concerns about chemical residue affecting food or beverage flavor. Most high-temperature models require a booster heater to bring incoming water to the required final rinse temperature -- some units include the booster, while others require it as a separate addition, so it is worth confirming booster inclusion before ordering. Low-temperature models sanitize using a chemical injection system rather than heat, which reduces energy consumption, eliminates steam output, and makes them a practical choice for installations where ventilation is limited or where 208/240V electrical service is not available.
Booster Heaters and Drain Pumps
Two of the most consequential options on an undercounter dishwasher are booster heater inclusion and drain pump inclusion. A booster heater raises incoming water temperature to meet the 180°F final rinse requirement for high-temp sanitizing -- without one, the machine relies entirely on the facility's hot water supply, which rarely reaches that temperature consistently. A drain pump allows the machine to discharge waste water to a drain line that is above floor level, which is a common situation in older buildings, bars with slab-mounted plumbing, and installations where a floor sink is not directly accessible. Units without a drain pump rely on gravity drainage to a floor sink directly below or adjacent to the machine. Confirming your drain configuration before selecting a model prevents installation complications.
ADA-Compliant Models

Beyond those, verify that the door opening height accommodates the tallest items you regularly wash, as standard undercounter dishwashers have a fixed rack clearance that may not fit tall pitchers, large plates, or certain glassware without a model specifically designed for greater interior height.
