For high-volume operations including commissaries, hotel kitchens, and institutional foodservice, large gravity-style interceptors handle peak flow rates from 75 to 500 GPM with grease capacities ranging from 150 to 1,000 pounds. These units are typically installed below floor level in the drain room and require professional installation coordinated with your plumber and local municipality. Flow rate sizing for large interceptors should be calculated based on the maximum simultaneous fixture load rather than average daily volume.
What to Consider Before You Buy
The most important specification is flow rate in gallons per minute, which must be matched to the combined peak flow of all fixtures draining into the interceptor -- not just the largest single fixture. Undersizing a grease trap is the most common installation mistake and results in grease bypassing the unit and entering the municipal sewer. Beyond flow rate, consider whether your local code requires a specific interceptor type, as some municipalities mandate gravity interceptors over hydromechanical units for larger operations.
