- Even temperature control from the top to bottom, front to back for precise baking; self contained shot injection on each deck for crusty artisan breads
- Independent programmable digital controller for each deck with front temperature loss compensation, economy mode, steam box on/off switch and 99 hour delay start-up time
- Independent steam tank(s) per deck to allow for high production capacity, in addition, decks can be operated without humidty
- Each deck holds (1) 18" x 26" full size sheet pan end loaded
- 1" (25 mm) thick refractory stone deck(s)
- 600°F (316°C) Maximum baking temperature
- Stainless steel construction
- Single point connection for electrical, drain, and water (multiple decks are interconnected)
